Beet Kale Salad
Gently wash a whole beet and grate it on a cheese grater (or however you grate foods). Keep the beet's peeling intact.
Chop kale in fine strands.
Finely dice up onions.
Toss with a simple herb, apple cider vinegar, and olive oil dressing.
